Chestnut Labs Announces Spring 2018 Education & Training Schedule

Chestnut Labs, an accredited food safety laboratory and training center, has announced its food safety course offerings for the first half of 2018.

The “M Series”, a curriculum of food microbiology courses designed for professionals with technical responsibilities in food safety, or those who need a basic understanding of food microbiology, will be offered from January through May 2018.

“We are excited to host food safety courses that teach tools and resources for those who can dramatically impact quality and safety in food manufacturing facilities,” Director of Technical Services Mary Bandu said. “We are eager to help professionals protect their product lines, improve their organizational policies, and make a positive contribution to the food industry.”

M102: Basic Food Microbiology with hands-on lab

Basic Food Microbiology (M102) is a foundational course designed for scientific and non-science majors alike. It introduces students to microorganisms and gives hands-on lab experience to attendees.

Course content begins with a general overview of microorganism classes and transitions into more specific content related to bacteria and pathogens. The course includes an exercise for evaluating processes as potential points for increasing or decreasing the microbial load in foods.

M102 is a 1.5-day course offered on the following dates:

M201: Advanced Food Microbiology: Pathogen Prevention and Testing with extensive lab

The Advanced Food Microbiology: Pathogens (M201) course is designed for students that have completed M102 or have some experience with microbiology in a laboratory setting. 

The primary focus of the course is pathogenic microorganisms in food. Attendees dive in for two and a half days of exercises in a lab setting including PCR testing for Listeria spp. Students will also explore manufacturing quality and food safety concepts such as the pillars of food safety.

M201 is a 2.5-day course offered on the following dates:

M202: Advanced Food Microbiology: Challenge & Shelf Life Studies

The Advanced Food Microbiology: Challenge Studies and Shelf Life Studies (M202) course is designed for students that have completed Basic Food Microbiology and Advanced Food Microbiology or have advanced experience with microbiology in a laboratory setting.  

The primary focus of the course is pathogenic microorganisms in food. The course includes 1.5 days of exercises in a lab setting, including the construction of death curves.
