IDFA & Chestnut Labs Partner Again For Dairy Course in 2018

IDFA and Chestnut Labs are teaming up again in 2018 to offer the dairy industry a specialized food safety training opportunity Nov. 6-8, 2018. 

Microbiological Testing: A Hands-On Food Safety Course is a career-building training opportunity offered exclusively for dairy industry professionals with food safety responsibilities, including those working in quality assurance and control, sanitation, maintenance, operations and more. The course will take place at the Chestnut Labs headquarters in Springfield, Mo. 

The course was developed by IDFA and Chestnut Labs to provide skills and tools for dairy plant professionals with responsibility for ensuring food safety.

The lab setting lets participants see how the learning objectives are put into practice, making this a unique education experience. The course offers participants the opportunity for growth within their companies and their fields.

Conducted over three days, the course will integrate classroom presentations, demonstrations and hands-on activities in a working laboratory setting to teach proper techniques, utilizing modern testing methodologies commonly used in the dairy industry.

Course content includes sessions on the following topics: 

  • Understand basic food microbiology, including common terminology and factors affecting microbial growth and survival in a dairy plant;
  • Control pathogens of concern, based on manufacturing environments;
  • Properly interpret and utilize Certificates of Analysis (COAs);
  • Comply with Food Safety Modernization Act regulations; and
  • Use pathogen environmental monitoring (PEM) principles to design a robust PEM program.

Attendees will also learn techniques for proper plating, reading and interpreting common indicator microorganisms, preventing common mistakes in microbiological testing, choosing correct test methods and performing internal lab audits.

Dairy professionals with food safety responsibilities, including quality assurance and control, sanitation, maintenance and operations, are encouraged to attend.

Registration includes three days of instruction, lunch, coffee breaks, and networking reception at the end of Day One along with take-home materials.

IDFA and Chestnut Labs will grant a 10 percent registration discount for groups of three or more people from the same company.
